A Greek salad is a refreshing and delicious dish that highlights the flavors of fresh vegetables, olives, and feta cheese. Here's a recipe for the perfect Greek salad using extra virgin olive oil:

Ingredients:

For the Salad:

  • 2 large tomatoes, diced

  • 1 cucumber, peeled and diced

  • 1 red onion, thinly sliced

  • 1 green bell pepper, chopped

  • 1/2 cup Chalkidiki olives

  • 1/2 cup crumbled feta cheese

  • 1/4 cup fresh parsley, chopped

  • 1/4 cup fresh oregano leaves, chopped (or 1 teaspoon dried oregano)

For the Dressing:

  • 2/4 cup extra virgin olive oil

  • 2 tablespoons red wine vinegar

  • 1 garlic clove, minced

  • Salt and freshly ground black pepper, to taste

Instructions:


Prepare the Vegetables:

  • In a large salad bowl, combine the diced tomatoes, diced cucumber, sliced red onion, chopped bell pepper, and halved Chalkidiki olives.


Make the Dressing:

  • In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, minced garlic, salt, and black pepper until well combined. Adjust the seasoning to taste.


Assemble the Salad:

  • Pour the dressing over the prepared vegetables in the salad bowl. Toss gently to coat the vegetables evenly with the dressing.


Add Feta and Fresh Herbs:

  • Sprinkle the crumbled feta cheese over the salad.

  • Add the chopped fresh parsley and oregano leaves.


Final Touches:

  • Give the salad one final gentle toss to combine all the ingredients and flavors.
